Our Story

One fire. One menu. No shortcuts.

Sable & Smoke began with a single oak-fired hearth and a stubborn idea: cook the way people cooked for centuries, with the precision of a modern kitchen. Chef Elena Marsh and her team of eleven build every menu around the morning's market run — if it isn't in season within a hundred miles, it isn't on the plate.

The room seats forty-eight. The fire never fully goes out. And the menu changes the moment the farms say it should.

The Craft

How a plate earns its place

Four disciplines, practised every single day. This is the standard behind every dish that leaves the pass.

01

The Wood

Post oak from a single Texas ranch, split and seasoned nine months. No gas, no charcoal — wood is our only fuel.

02

The Ember Bed

The fire is lit at 9am and read by hand, not thermometer. Each station cooks at a different heat drawn from one bed of coals.

03

The Morning Market

Fourteen partner farms within a hundred miles. The menu is written at 4pm, after the trucks — never before.

04

The Pass

Every plate is tasted, torched or ember-finished seconds before service, and plated by the chef who cooked it.

Good Questions

Before you book

The dining room books out two to three weeks ahead on weekends; the chef’s counter, about a month. Weekday first seatings are often available within days — and the bar is always walk-in after 10pm.
Gladly. Note them when you book and the kitchen adapts the tasting menu course by course — vegetarian and vegan journeys are written with the same care as the main menu, never as an afterthought.
Life happens — cancel free of charge up to 3 hours before your seating, right from your confirmation or by phone. We hold every table for fifteen minutes past the seating time.
The Copper Room seats fourteen around one oak table with a dedicated sommelier and a menu printed for your evening. Full-room hire is available on Mondays, when the fire would otherwise rest.
Valet runs from 6pm nightly, and street parking surrounds East 6th. Dress is smart-casual — most guests dress for the candlelight, but the only real rule is: come hungry.
